I don't know if you'll have time to get outside of Havana, but if at all possible you should try to see the Cuban Bee Hummingbird, which is the smallest bird in the world.

This overview from Cornell says there is an area called the Guanahacabibes Peninsula at the extreme western end of Cuba where the hummer can be found. So shouldn't be too far from Havana.
